Halloween is upon us so let’s make it a healthy one!

Platinum Pilates PumpkinPumpkins are everywhere and there is no better way to be resourceful with our pumpkins than to make gorgeous granola with them!

I love making roast pumpkin soup, pumpkin curry, but I love pumpkin granola best! I pack my breakfast granola with autumnal flavours and brimming with plenty of nuts and seeds to satisfy mid morning cravings until lunchtime!

This granola is nutritious, extremely healthy and the pumpkin puree adds a delicious sweetness to the granola that gives it a naturally sweet flavor. (Don’t forget to save pumpkin seeds so saves you on an extra granola ingredient!)

Pumpkin a brilliant Halloween decoration it is also surprisingly nutritious too!

1. Pumpkin is full of Fiber

Pumpkin seeds pack about 1.7 grams of dietary fiber per ounce, while mashed pumpkin has only 50 calories per cup and 3 grams of fiber. The fiber helps keep you fuller longer, which will keep your appetite at bay and lead eating less and reduce cravings!

2. Boost your Vision

100g cubed pumpkin contains almost twice the recommended daily intake of vitamin A, which promotes good vision, especially in dim light. Vitamin A also helps maintain healthy skin, teeth and bones.

3. Lower Blood Pressure

Pumpkin seed oil is full of Phytoestrogens which are beneficial for preventing hypertension. Research has shown that pumpkin lowers both systolic and diastolic blood pressure in just 12 weeks, so stock up over Halloween!

4. Sleep Better


Pumpkin seeds are rich in tryptophan, the amino acid that contributes to general sluggishness. Tryptophan is also responsible for helping the body make serotonin. We all know serotonin as the feel-good neurotransmitter that helps you relax. Pumpkin seeds not only promote better sleep but the serotonin will improve your mood.

Before you get cracking on the Granola you will need to make Pumpkin puree. Do not panic- pumpkin puree is super easy to prepare!

 pumpkin 1Pumpkin Puree (makes 1 cup)

  1. Preheat oven to 190 degrees.
  2. Carve pumpkin in half.
  3. Remove stem and omit the pumpkin gunk and save the seeds.
  4. Steam in the oven face down in 1/2” of water
  5. Cook for 1 hour.
  6. Remove and cool for 20 minutes.
  7. Scrape out pumpkin and blend.
  8. Set aside
  9.  Enjoy & Happy healthy Halloween!!
