Try This Healthy Twist On The kiddies (big and small!)

This is one of my favourite healthy comfort food to make and it is easy and fast to do too so it is perfect for busy families. A way to feel like you are having a treat without the badness…….you can’t get better that that!

 

Ingredients:

400g chicken sliced into thin strips or small wedges

100g desiccated coconut

2 small eggs

100g almond flour/coconut flour/ ready brek/ oat flour (whatever you have in the cupboard)

 

Method:

1) Preheat oven to 180 degrees

2) Dip chicken in flour

3) Dip in egg

4) Dip in coconut

5) Pop in oven under golden brown and chicken is cooked through

 

Perfect after a long days work…..
