A quick and easy recipe for anyone looking for a healthy, wholesome bread or alternative to classic scones
The recipe is taken from my favourite cookbook Natural Born Feeder. I love all the recipes in this book as it caters for everyone from vegans, vegetarians, meat lovers to people who suffer from food intolerances.
I love this recipe mainly because I can throw it together any time I want to, as all of the ingredients are things you would have at home anyway.
180g oat flour (blend oats into fine flour in blender)
160g Milled seeds (I use chia seeds)
1 tablespoon baking soda
1 tablespoon vanilla
2 tablespoons apple cider vinegar
3 tablespoons melted coconut oil (or oil of choice)
175 mls Almond milk (or milk of choice)
Preheat oven to 180 degrees. Mix all dry ingredients
Mix all wet ingredients
Combine wet and dry ingredients. Dough should be thick and abit sticky, if its too wet add more flour, too dry add more milk (just a drop).
Put dough in prepared bread tin. Alternatively you can form into scones.
For bread- place in oven for 40 minutes until golden brown. For scones place in oven for about 20 minutes until golden.
