We are hitting our quota of leafy greens with the spinach and broccoli, providing us with calcium and iron.
Resting on top of this we have sweet potato, which wipes the floor with regular spuds every time. They have buckets of Vitamin C, Calcium, Fibre and flavonoids. One sweet potato provides over 400% of the RDA of Vitamin A which is essential for our vision and immune system.
Thrown into the mix is creamy, delicious avocado. Alarm bells ring when we think of high fat foods, but its all about the type of fats. The majority of avocado fat is in the form of oleic acid which has been shown to reduces levels of bad cholesterol and inflammation in the body.
Just when you thought the salad couldn’t get any better we are throwing in mixed nuts. High in protein and omega 3 fatty acids, they can lower bad cholesterol levels to help protect against coronary heart disease and strokes. They are also been linked to improving brain power and even preventing depression.
Finish off with some raspberries and blueberries which are bursting with fibre and antioxidants and taste oh so good!
1/2 sweet potato
Mixed Leafs and Spinach
Raspberries and Blueberries
Florets of broccoli
Roasted Mixed Nuts- almonds, hazelnuts, walnuts etc
For the dressing just add a dash of Extra Virgin Olive Oil and sprinkle of salt.
You can have raw, lightly roasted or steamed broccoli. Throw together and serve.
