Taco night! Those two little words bring big smiles to everyone at dinner time!
Here’s a new way to do tacos that might be even easier than the traditional method, and it’s vegetarian, too!
This “one pot wonder” casserole combines everything you love about tacos in a tasty and delicious dish! If you like your meat then feel free to add some chicken to it.
What you need:
425g tin of pinto beans drained,
425 g can of diced tomatoes,
1 chopped green chilli,
1 chopped red chilli,
1/2 jar of jalapenos,
3 cups cooked brown or white rice,
1/2 teaspoon chili powder,
1/2 teaspoon salt,
300g shredded cheese, I uses cheddar and mozzarella,
Tortilla chips for serving.
How you make it:
Preheat the oven to 160 degree. Maybe slightly higher if you don’t have a fan oven.
Mix the beans, tomatoes, chiles, rice, chili powder, salt, 150g of cheese, jalapenos together in a large bowl.
Pour the mixture into a baking dish and sprinkle the remaining cheese evenly over the top.
Bake for 30 minutes.
Serve with tortilla chips on the side or for scooping.
If you like it less spicy remove some of the chilli. If you want to make it even tastier throw in a tin of chick peas too. Remember I basically live on chickpeas so find any excuse to add them into a dish!
