With this hot weather, I always find I want something light to eat.
The thoughts of standing over a hot cooker in this weather are not appealing.
Even with kids on holidays I find I am still rushing around so this is super easy and quick to make. It can double as a lunch or dinner. The salad contains antioxidants, calcium, magnesium, Vitamins A and C and Omega 3. I love trying to get as many natural vitamins into the kids and this one is jam packed.
What you need.
- Varied lettuce leaves
- 1 Mango
- 1 Pomegranate
- Mixed nuts
- Your favourite salad dressing
- White wine vinegar
- Olive oil
- Honey
- Salt to season.
What you do.
Salad:
1.Peel and cut the mango. Hold a third of it for the dressing. Cut the rest in small cubes.
2.Cut the selection of mixed nuts into small pieces. I normally choose walnuts and pistachios but you can add whatever you like.
3. Mixed everything together. You can also add a bit of either feta of goat’s cheese if you like.
Dressing:
Place a third of the chopped mango in a food processor along with 1 tbsp of white wine vinegar, 2tbsp of olive oil, 2tsp honey and some salt. Blend until smooth. Dress the salad just before eating.
Quick, easy and healthy. Enjoy.
