Tasty & Healthy – a wheat free spelt bread recipe by Audrey
This bread contains protein and fibre rich flax seeds, potassium filled bananas and wheat-free spelt flour
In the mornings I crave the usual eggs, porridge and usually anything with avocados. But some days especially after a bank holiday weekend you just need a healthy sweet treat to start your day. My banana, walnut and cocoa bread definitely hit the spot this morning!
This bread is sugar free, wheat free , low fat and it can be dairy free too! What more could you want from a sweet breakfast treat?! This bread contains protein and fibre rich flax seeds, potassium filled bananas and wheat-free spelt flour! I like nothing more then topping a slice with a dollop of gooey almond butter to give me my morning fluid for the day of Pilates classes ahead!
2 cups of Spelt flour
1 tablespoon baking soda
3/4 tablespoon baking soda
3/4 teaspoon salt
2 tablespoons of raw cacao
1/3 milk of choice (almond/soya/regular)
1 teaspoon vanilla essence
4 tablespoons honey
1 teaspoon lemon juice
2 tablespoons ground flaxseeds
1/2 cup of walnuts (Save 4 for the topping)
2 cups of tightly mushed banana (save a few thin slices for the topping)
Preheat oven to 180 degrees
Grease a standard sized bread loaf tin ( I line mine with coconut oil)
Combine the dry ingredients in a bowl.
Combine the wet ingredients in a separate bowl.
Slowly mix in the wet ingredients in to the dry ingredients
Once combined well pour into loaf tin with sliced banana and walnuts.
Place in the centre preheated for 40- 45 minutes until nice and brown.
Cool on a baking tray.
