Gigi’s ultimate guilt free pizza!
Cooking is something that I’ve only started exploring and enjoying this year, I never realized how therapeutic and satisfying it is. The past month I’ve decided to cut wheat out of my diet and though it may seem hard it has actually been very enjoyable coming up with fun healthy recipes.
The evenings I’m not working I usually spend at home playing around in the kitchen, this week I decided to make the ultimate guilt free pizza 🙂
Head of Broccoli
Salt & Pepper
1/2 Red Onion
1 Red Pepper
Preheat the oven to 200C.
Cut up the broccoli florets and place into a food processor and blitz it but be aware that not to over blend otherwise it will turn into mush.
Pop the broccoli into the microwave for 4 minutes.
When taking the broccoli out grab a kitchen towel and pat down to take out the excess moisture.
Place in a bowl and add the 2 eggs in, then 8 cubes of the feta cheese. Make sure to mix well.
Cut up the baking paper and place on top of a baking tray.
Spread the contents of the bowl onto the baking tray making sure to put the thicker around the edges so you have a crust.
Pop into the oven for 15 minutes.
Add the tomato puree, canned tomatoes into a blender.
Chop up your onion, red pepper and chili, place all of this into a blender.
Add some pepper and salt and whatever mixed herbs you like.
Blitz away until your left with a rich tomatoey sauce!
Once the 15 minutes are up, add the sauce and whatever toppings you wish.
I used parma ham, feta cheese, spinach, cherry tomatoes and drizzled some olive oil on the top.
Place back in the oven for 10 more mins then pop on the grill for 2-3 minutes to brown the top.
There you have it a delicious and guilt free pizza, that keeps you full and no wheat belly after 🙂
